Baked Corn Casserole

You know how every once in a while the perfect combination comes together to make your life a little more fun?

Like peanut butter and jelly. Or cake and ice cream. Or a warm fire and a nice cocktail.

Well, add this Baked Corn Casserole to your list! It’s like a great big hug of hot, satisfying tastiness!

Our team got together the other day for one of our first in-person gatherings to cook together, share a few laughs and talk about nothing in particular but everything important. This is such a great group of people to spend time with and I am so proud I can spend time with them both inside and outside the office.

Here is the recipe. It could very well be your next favorite side dish!

BAKED CORN CASSEROLE

INGREDIENTS

Serves 6-8 (but I usually double it!)

12oz can of whole kernel corn

12 oz can of cream-style corn

3 oz sour cream

1 cup melted butter

2 eggs slightly beaten

12 oz corn muffin mix

DIRECTIONS

Preheat the oven to 350 degrees

Combine all ingredients into a large mixing bowl and mix well

Pour into a 9×13 pan

Bake 30-30 minutes
